Beef & Herbs Recipes
INGREDIENTS
- 2–3 lb top round sirloin roast
- 1 can French onion soup
- 1 cup beef broth (optional but helps keep it juicy)
- 1 onion, sliced (optional but excellent)
- 3–5 garlic cloves, smashed
HERB BLEND
- 1 tsp dried rosemary
- 1 tsp dried thyme
- ½ tsp oregano
- ½ tsp sage
- 2-3 Bay Leaves
- Black pepper (go light on salt—the soup is already salty)
INSTRUCTIONS Season roast with herbs, pepper, and a splash of Worcestershire sauce. Layer the base. Add sliced onions and garlic to the bottom of the slow cooker. Place the roast on top of the onions. Pour the can of French onion soup over the roast. Add beef broth if using. Cook: LOW: 8–9 hours (best). HIGH: 4–5 hours.
Flavor Boost Tips
Add onions, carrots, and celery underneath the roast. Use beef broth or stock (1–2 cups). I used 1 can of French Onion Soup.. A splash of Worcestershire sauce or balsamic vinegar deepens flavor.
Cook low & slow (8–9 hours on LOW).
Porterhouse Steak and Herbs
INGREDIENTS:
1 large porterhouse steak (1½–2 inches thick)
2 tablespoons olive oil
1 tablespoon butter
3 garlic cloves, smashed
1 teaspoon sea salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon smoked paprika
Fresh Herbs
2 sprigs rosemary ~ 3 sprigs thyme ~ 1 tablespoon chopped parsley
Optional Add-Ons
Mushrooms ~ Caramelized onions ~Blue cheese crumbles
INSTRUCTIONS:
Let the steak sit out for 30–45 minutes before cooking. Pat dry with paper towels.
Rub with olive oil, then season both sides with: Salt ~ Pepper ~ Onion powder ~ Smoked paprika
Heat a cast-iron skillet over high heat until very hot.
Cook steak: 3–4 minutes per side for medium-rare. 4–5 minutes per side for medium.
Lower heat slightly. Add: Butter ~ Garlic~ Rosemary ~ Thyme
Tilt pan and spoon the melted herb butter over the steak for 1–2 minutes.
Transfer steak to a plate and rest 10 minutes before slicing.
Top with fresh parsley and extra butter if desired.
Great Side Dishes: Garlic herb mashed potatoes ~ Roasted asparagus ~ Parmesan green beans ~ Herb butter mushrooms ~ Caesar salad.
SIMPLE GARLIC HERB BUTTER
Mix together: 4 tablespoons softened butter. 1 garlic clove minced. 1 teaspoon parsley. ½ teaspoon rosemary. Pinch of salt. Melt over the finished steak before serving.
Pot Roast with Garlic & Bay Leaf
INGREDIENTS:
3 lb chuck roast
4 potatoes, chopped
4 carrots ~ 1 onion, sliced
3 garlic cloves, minced
3 cups beef broth
3 bay leaves ~ 1 tsp thyme
Salt & pepper
INSTRUCTIONS: Season roast with salt and pepper. Place vegetables in slow cooker. Add roast, broth, garlic, thyme, and bay leaves. Cook on low for 8–9 hours.
Remove bay leaves before serving.
Garlic Herb Paprika Burgers
Ingredients
1½ lbs ground beef
1 tsp paprika
½ tsp smoked paprika (optional)
1 tsp garlic powder
1 tsp onion powder
1 tsp parsley
½ tsp thyme
½ tsp rosemary, finely minced
Salt & black pepper
1 tbsp Worcestershire sauce
2 tbsp butter
2 garlic cloves, minced
Best Paprika Types
Sweet paprika → mild rich flavor
Smoked paprika → smoky BBQ flavor
Hot paprika → spicy kick
INSTRUCTIONS:
Mix beef with paprika, garlic powder, onion powder, herbs, Worcestershire sauce, salt, and pepper.
Form into patties. Heat skillet or grill over medium-high heat. Cook burgers 4–5 minutes per side.
During the last 2 minutes, add butter and garlic to the pan.
Spoon garlic butter over burgers while finishing cooking.
Serve on toasted buns with your favorite toppings.
